- Black Bean Brownies with Vegan Coconut Milk Tea Ice Cream -
I have made a lot of brownies but these were the best I ever made and I would have never expected it to be made from black beans! They are way healthy and taste so much better. Don’t be skeptical about these just because they are made from black beans. They are honestly amazing, super moist, fudgy and really strong taste cacao. Also, its super cheap to make this!
I decided to make my own chocolate to go with this as well, instead of using store bought chocolate chips, just because they usually have a lot of added sugar. Also, I wanted this with vegan ice cream so I decided to make that too! It’s basically 3 recipes in one post! But you can buy the chocolate chips and ice cream of course! Just make the brownie.
To make the raw chocolate and vegan coconut milk tea ice cream, you have to make it a day before. Also, sorry for the melted ice cream pictures… it’s really hot in Hong Kong.
HEALTHY TIPS:
If you want to make the vegan ice cream have less saturated fat, add less coconut milk and more frozen bananas instead.
If you aren’t vegan, you can replace the honey with stevia.
Also a pinch of salt into desserts so it enhances the flavours of the natural ingredients, like cacao powder.




Vegan
Recipe:
Makes about 5 brownies and 5 scoops of ice cream
Ingredients for Raw chocolate:
60g of Cacao Powder
60g of Coconut oil
Stevia
Heat the coconut oil in a saucepan.
Add the stevia and cacao powder, mix until completely smooth.
Pour onto a plate lined with parchment paper.
Put into the freezer.
Ingredients for Vegan Coconut Milk Ice Cream:
150ml of Coconut milk
100ml of Black tea
2 Frozen Sliced Bananas
Pinch of Salt
Pout hot water into the black tea, let the teabag soak so the flavor is stronger. Wait until the water has cooled down
Food process the frozen sliced bananas.
Add the coconut milk, tea, and salt into the food processor. Blend until smooth.
Pour into a bowl, cover with cling film and put into the freezer.
Ingredients for Black bean brownies:
240g of Cooked Black Beans
15g of Cacao Powder
40g of Gluten Free oats
40g of Coconut oil
½ teaspoons of Baking Powder
1 1/2 tablespoons of Maple Syrup
2 teaspoons of Vanilla Extract
Pinch of salt
Stevia
Chocolate chips / Raw chocolate (broken into small pieces)
Preheat the oven to 180C.
Food process all the ingredients together, except the chocolate chips.
Mix the chocolate chips / raw chocolate into the batter.
Place into a greased baking tray and cover with more chocolate chips / raw chocolate.
Bake for around 15mins.
Let it cool.

The Black Bean Brownies alone
Assembling:
Take out the vegan ice cream and let it defrost, this takes about 30-40mins or longer. The texture will be slightly icy but if you want it creamier, food process it.
Cut the brownies and place the vegan ice cream on top.
Sprinkle with a bit of cinnamon and shredded coconut if you want. You can also drizzle some maple syrup on it!
