- Vegan Black Quinoa Sushi -

Sharing this vegan quinoa sushi roll; black quinoa with cucumber, avocado and carrot. It sounds so simple, but its so good. You don’t need a lot of ingredients and you can get really creative, any grain and any filling! I made a black quinoa version and a version with white rice, but the next time I’m making it, I’m definitely making it more unique :P

Recipe:

Makes about 4 rolls (each roll equivalent to 6 pieces of cut sushi):

  • 150g of uncooked black quinoa

  • 1 tablespoon of miso paste

  • 1 avocado

  • ½ a cucumber

  • 1 carrot

  • 2 tablespoons of sushi vinegar

  • 4 Nori Sheets

  • Bamboo Mat

  1. Put 150g of black quinoa and 300g of water in a pot. Bring to a boil.

  2. When the water is boiling, add the miso paste.

  3. Reduce the heat to low. Cover and cook for 15mins. Let it stand for 5mins after its done.

  4. Cut the cucumber into long strips, around the length of the nori.

  5. Slice the avocado, cut the carrot into thin strips or shred it using a spiralizer.

  6. When the black quinoa is done, mix 2 tablespoons of sushi vinegar into it. Spread it out on a plate and let it cool down to room temperature.

  7. When the black quinoa is cooled, place a sheet of nori on the bamboo mat.

  8. Spread the black quinoa evenly on the sheet of nori leaving space about the a third of the nori sheet uncovered.

  9. Place a strip of cucumber, some avocado and carrot on the edge of the nori with black quinoa.

  10. Roll the nori away from you, covering the filling, making sure that each roll is right.

  11. Continue rolling the sushi, making sure each roll is tight.

  12. When it’s done, cut the roll into even sizes.
