- Savoury Mornings -

You all know that breakfast is the most important meal of the day and frankly, I love breakfast. I mean it’s the best time of day to eat carbs. I usually like to start my mornings with complex carbs, usually gluten free oats (I like to go gluten free because it doesn’t make me bloat and its easier to digest) or fruits. I’m sure you have seen pancakes topped with chocolate or fruits all over instagram (and as much as I’m a fan of pancakes) sometimes you just want something savoury. Hence, the ‘savoury morning’ or as my boyfriend says, ‘save your mornings’.

This is super fast, simple which is of course what we all need in the mornings. This is also vegan, full of healthy fats, carbs and it will definitely keep you full for a while! This is also slightly more unusual because I’ve added the salt called, kala namak aka black salt, which mimics the taste of eggs due to the high sulfur content. The black salt is a must for vegans. I’ve also added mint, which makes the overall dish slightly lighter.

Gluten Free, Vegan

Recipe:

Makes 1 portion

Ingredients:

35g of Gluten free porridge oats

½ an Avocado

Handful of Spinach

Pinch of black salt

Pinch of pepper

Mint

  1. Cook the porridge oats on the hob with around approximately 120ml of cold water (add more or less water accordingly to how think you want it to be).

  2. Add a pinch of the black salt and pepper.

  3. Add the spinach when the porridge oats are almost done. The oats should take about 10mins.

  4. Cut the avocado, splice and place on top of the cooked oats.

  5. Cut the mint and sprinkle over the avocado and oats.
