- Vegan, Gluten Free Courgette Pizza -

One of the memories that stuck with me after going to Rome is the pizza from Forno Campo de’ Fiori. Our friend bought us here and I would have definitely not found this place otherwise. It looked nothing special from the outside but the smell of pizza filled the place and the queue (all locals) was out the door. We tried a few different variations, including the classic, olive oil and sea salt. My favourite however, was the courgette pizza.

Ever since, courgette pizzas has become my favourite, although none of the ones I have tried will beat the one from Forno Campo de’ Fiori. I decided to make a vegan and gluten free courgette pizza that was also slightly healthier. Bear in mind that since only rice flour is used, the texture of the pizza will be slightly different to the regular pizzas. Try it and let me know how you like it! :)

Vegan, Gluten Free

Recipe:

Makes 2 pizzas

Ingredients:

  • 1 tsp of dry fast acting yeast

  • 1 tsp of sugar

  • 100ml of warm water

  • 100g Rice Flour

  • 1 tbs of olive oil

  • Sprinkle of Salt

  • Add water as you need

Toppings

  • 9 cloves of garlic

  • Thyme

  • 5 tbs of Olive oil

  • Vegan Cheese – Pizza Mozzarella flavor (from Violife)

  • ½ a Courgette

  • Black pepper

  • Nutritional Yeast

  1. Preheat the oven to 180C.

  2. Mix 1tsp of dry acting yeast and 1tsp of sugar with 100ml of warm water, let it sit for about 5mins.

  3. Mix 100g of rice flour with a bit of salt.

  4. Sift the rice flour into the yeast once the yeast is ready.

  5. Add 1 tbs of olive oil to the mixture and mix. Add water depending on the mixture, add a bit each time to prevent the mixture being too moist. Mix and knead until dough is formed. You won’t need as much kneading compared to plain flour.

  6. Grate the cloves of garlic, add as much thyme as you like, add around 5 tbs of olive oil. Let it sit.

  7. Split your dough in half and roll it out to as thin / thick as you like.

  8. Brush your dough with the garlic and thyme infused olive oil.

  9. Bake in the oven for 10mins.

  10. Cut the courgette into thin slices.

  11. Take the dough out of the oven. Layer the dough first with cheese, then courgette (place it so that the courgettes are slightly overlapping), layer a bit more cheese. Sprinkle with nutritional yeast and season with black pepper.

  12. Bake in the oven for 20mins.
