- Winter Warmer (vegan)-

I have a habit of curling up on the couch and watching TV whilst I eat, which means I like to have all my food in a bowl. This bowl contains a lot of veggies, which may or may not appeal to some of you but I suggest you give it a shot, especially if your New Year’s resolution is to eat more vegetables! Not to mention its perfect for those who are just beginning to learn to cook.

Recipe

Makes 2 servings

Ingredients:

  • 2 sweet potatoes

  • 1 eggplant

  • 1 bell pepper

  • 1 tomato

  • Some mushrooms

  • Spring onion

  • 1 teaspoon of miso paste

  • Some honey

  • Black pepper

  • Cayenne pepper

  • Spring onion

  1. Preheat the oven to 180C

  2. Boil the sweet potatoes, make sure that the water covers the sweet potato. Boil for around 25-30mins until the sweet potatoes are cooked, you should be able to poke it easily with a fork.

  3. Dissolve the miso paste in some water, drizzle a bit of honey into it. Marinate the sliced eggplant in the miso and honey.

  4. Slice up the mushrooms, bell pepper, and tomato.

  5. Bake the eggplant for around 20-25mins, it should be a nice golden brown colour.

  6. 15mins before the eggplant is done, season the bell pepper, mushrooms and tomato with some cayenne pepper and black pepper and put it in the oven.

  7. Mash the sweet potato, top with the vegetables.

  8. Dice the spring onion and add to the bowl as garnish.
