- Mini Croissants (Vegan) -

What’s dessert without a touch of almond butter… combining croissants with almond butter is THE way to do it.

I didn’t make the puff pastry, as I was short on time and Jus Roll’s pastry was already vegan. But if you have the time, you can definitely make your own! Just replace the butter with coconut oil or vegan butter :D

By the way … these croissants are mini sized meaning you can have more than one without feeling guilty or just have one if you want a small snack.

Recipe

Makes 20 mini croissants

Ingredients:

  • 100g of Jus Roll puff pastry block

  • 40g of almond butter (add more or less depending on how filled you like your croissant to be)

  • Melted Vegan Butter

  • (A ruler so your croissants are roughly the same size)

  1. Preheat your oven to 25C

  2. Roll out the puff pastry block to your desired thickness or use the puff pastry sheets.

  3. Measure 5cm from the sheet and make a mark. Cut diagonally so you have a triangle piece of dough.

  4. Repeat with the rest of the pastry

  5. Put a teaspoon of almond butter at the base of the triangle.

  6. Start rolling up the croissant from the base, towards the tip of the triangle

  7. Now bend the two ends of the croissant towards each other so you form a crescent shape

  8. Repeat until all the croissants are formed

  9. Brush the croissants with the melted vegan butter.

  10. Puff the croissants in the oven at 25C, this look around 1.5 hours. You know they are ready when you can see the layers of dough in the croissant

  11. Heat the oven to 180C and brush the croissants with melted vegan butter again.

  12. Bake for 10mins, they will nicely browned, let it cool on the sheets.
