- Chocolate Lavender Scones (Vegan) -

Lets quit the chitchat and get to the recipe :) Also, if you want your scones more buttery add a bit more vegan butter or coconut oil. Enjoy :)

Recipe

Makes about 17 scones (size shown in the picture)

Ingredients:

  • 250g of all purpose flour

  • 1 tbsp of baking powder

  • 40g of coconut sugar

  • Pinch of salt

  • Lavender (around 2-3 tbsp)

  • 1 flax egg (1 tbsp of flaxseed + 2 tbsp of water)

  • 70g of vegan butter (at room temperature)

  • 2tsp of vanilla essence

  • Unsweetened almond milk or any plant based milk

  • Vegan chocolate chips / bar (that has been cut into small chunks)

  1. Preheat the oven to 180C.

  2. Make the flax egg; mix 1tbsp of flaxseed and 2tbsp of water.

  3. Sift the all purpose flour and coconut sugar into a bowl. Add the rest of the dry ingredients; baking powder, salt, lavender.

  4. Add the vegan butter to the dry ingredients; use your fingers to mix the butter and dry ingredients together, it should be a nice crumbly texture with no large lumps of butter.

  5. Add the flax egg and vanilla essence to the ingredients. I find it the easiest to use your hands to mix everything together.

  6. Next add the almond milk, add it 1tbsp at a time and mix. You want the dough to stick together but not to the point where it is very wet and sticky. Instead, you want the dough to be slightly crumbly. Its easy to add more liquid but once you add too much, its hard to go back from there. I added around 3 tbsp of almond milk.

  7. Add the vegan chocolate chips / chocolate bar into the mixture and mix well.

  8. Once your dough can stick together and is slightly crumbly, roll it out on a floured surface to a rectangle shape. The dough should be about 1-1.5inch thick.

  9. Cut the dough in half (lengthwise) so now you’re left with two rectangular dough. Now start cutting one of the rectangular dough into triangles or squares, whichever you prefer. You can mold the edges of the triangle/square so you get more rounded scones. Continue with the other dough.

  10. Place the scones on a non stick baking sheet and bake for around 15-20mins or until golden brown.
