- Pearl Couscous Salad -
Okay, so I just made this massive order from iHerb.com and I found my pearl couscous. Which is basically a larger version of couscous which has a really nice chewy texture and it goes perfectly with salads, baked, stuffed in vegetables and more! I honestly can’t wait to try more recipes with it! I’m just sharing one for today, which you should make more of because you'll finish it incredibly fast and if you have the will power to not finish it in one go, save it for tomorrow! Recipe:
Makes 2 servings
Ingredients:
120g of Dry Pearl Couscous
1 Red bell pepper, sliced
1 Yellow bell pepper, sliced
100g of Mango, cubed
5 Mushrooms, sliced
Handful of Spinach
2 tsp of Coconut oil
4 Cloves of Garlic, diced
Spring Onion, diced
Coriander, diced
½ a Lemon
Salt
Pepper
Boil 300ml of water, when it’s boiling, add 120g of dry pearl couscous.
Bring to a boil again, season with a bit of salt.
Bring the heat down to low and cook for 20mins or until all the water has been absorbed.
Heat 2 tsp of coconut oil in a pan, add the garlic and spring onion.
Fry the garlic until its slightly golden brown. Then add the sliced bell peppers and mushroom, season with pepper. Fry until the vegetables are done.
Mix the cooked vegetables, cubed mango, spinach, and coriander with the cooked pearl couscous in a large bowl. Squeeze half a lemon into the bowl, mix well.
