- Salted Vegan Cinnamon Rolls -

I love the smell of baking that fills up your house, its warm, its gives you a festive vibe, and it constantly makes you hungry, but I’m not sure if that’s a good thing. Although even after the smell is gone, the cinnamon rolls will keep you going, and this is where self-control really needs to come in. Good luck not finishing these in one go….

Vegan

Recipe:

Makes 24 rolls

Ingredients:

  • 140ml of almond milk

  • 1 sachet of active yeast

  • 1 tsp of coconut sugar

  • 100g of vegan butter

  • 1 tbsp of vanilla essence

  • 300g of bread flour

  • 90g of coconut sugar

  • Pinch of salt

  • Some cinnamon

Filling:

  • 1 tbsp of vegan butter

  • 3 tsp of coconut sugar

  • 1 tbsp of cinnamon

  • Pinch of salt

For decoration:

  • Icing sugar (optional)

  1. Warm the almond milk and add the 1tsp of coconut sugar. Mix the active yeast and let it get bubbly

  2. Mix the flour, salt, coconut sugar, and cinnamon in another bowl

  3. Add the yeast mixture into the dry ingredients, mix

  4. Melt the butter, add it to the rest of the ingredients

  5. Add the vanilla essence.

  6. Mix until a ball is formed, add more flour / almond milk if needed.

  7. Let it rise in a warm place, covered with a damp cloth, for about an hour

  8. Preheat the oven to 180C.

  9. Split the dough into two or three smaller pieces so its easier to roll out

  10. Roll out the dough into a rectangle

  11. For the filling: mix the melted butter with the rest of the filling ingredients.

  12. Spread out the filing onto the rolled out dough and tightly roll it up

  13. Cut into even pieces and place into a greased pan

  14. Repeat until all the dough is used, I made 24 cinnamon rolls

  15. Bake in the oven for 20-25mins until golden brown.

  16. Let it rest and sift some icing sugar for decoration.
