- Vegan Blondies Made with Black Beans and Almond Butter (Vegan, Refined sugar free) -
Cheers to guiltfree desserts! These vegan blondies are made from black beans and only have 25g of coconut sugar added to them. Don’t fret though, these are sweet from the agave syrup which is a potent sweetener (a little goes a long way) and the chocolate and almond butter also sweetens the dish. These are the perfect way to satisfy your sweet tooth and nourish your body. Make these and bring them on the go so you don’t reach for store bought sweets that contain double (or more) than the amount of sugar!




Recipe
Makes 20 servings
Ingredients
240g of cooked black beans
40g of vegan butter
60ml of soy milk (or any plant based milk)
1 ½ tbsp of agave syrup
1tsp of vanilla extract
40g of oat flour
25g of coconut sugar
1/2 tsp of salt
½ tsp of baking powder
½ tsp of cinnamon
2 tbsp of almond butter
40g of Vegan chocolate (broken into pieces)
For drizzling: 3 tbsp of almond butter
Preheat the oven to 180C
Completely food process the cooked black beans, put it in a bowl
Melt the vegan butter, add it to bowl. Then add the soy milk, agave syrup, and vanilla extract to the bowl. Mix well
Mix the dry ingredients into another bowl; oat flour, coconut sugar, salt, baking powder and cinnamon.
Add the wet ingredients into the dry ingredients, mix well; the mixture should be similar to something like a spread. If its too watery, add some more oat flour and if its too dry add a bit more vegan butter / soy milk
Add the vegan chocolate and almond butter to the mixture and mix.
Oil a baking tray, pour the mixture into the tray and bake for 10-15mins
Let the vegan blondie cool down.
Food process the almond butter until its quite smooth, put it in a pipe bag and drizzle over the blondie once it has cooled down.
