- Falafel Nuggets -

A vegan meal for 2. So my boyfriend and I are a bit addicted to hummus and falafel made with cannelloni beans and chickpeas. The falafels also have breadcrumbs and nutritional yeast added to it so it’s slightly cheesy and the breadcrumbs give it a nice texture as well.

Salad with Balsmic Vinegar, Hummus with Carrots, Falafel nuggets, and chia seed pudding for dessert.

I had this with a salad dressed in balsamic vinegar as well and of course, hummus with carrots. Hummus with carrots is one of my favourite combination; its filling, a good course of protein and is a perfect finger food. Also, this meal made me realize that falafel and hummus together is amazing together. I mean they are made from the same thing but the difference in texture of the falafel and hummus is so good. You have to try. To make the hummus, you just need to process the cannelloni beans and chickpeas into a nice smooth paste. You can also make the falafel and hummus ahead of time. It’s a perfect meal prep food!

Hummus with Carrots

Falafel Nuggets

Vegan

Recipe:

Makes about 20 falafel nuggets:

Ingredients:

  • 160g of Cannelloni beans

  • 160g of Chickpeas

  • 40g of Breadcrumbs

  • 1.5 tablespoons of coconut oil

  • Salt

  • Pepper

  • Nutritional yeast

  1. Food process the cannelloni beans, chickpeas, coconut oil, salt and pepper. Don’t over food process as you want the falafel to have slight chunks so its not a smooth paste.

  2. Mix in the breadcrumbs and nutritional yeast into the mixture.

  3. Take a spoon of the mixture and form into a rectangle shape.

  4. Add coconut oil to a non – stick pan, put the falafel into the pan. Fry evenly on all 4 sides.
