- Weekday Brunch (Avocado Toast and Green Smoothie) -

I’m a fan of the simple avocado toast but I decided to upgrade it a bit :P I wanted to add some vegetables, so spinach, tomato and alfalfa (my newest obsession) it was. It took me like 5mins to make, so good and simple. I also paired this with a green smoothie, which is my idea of the perfect brunch!

Vegan

Recipe:

Makes 2 portions

Ingredients for the Green Smoothie:

  • 1 Banana

  • ½ a Cucumber

  • Handful of Spinach

  • ½ a lettuce

  • Rice Protein Powder

  • 150ml of Soya Milk (no added sugar)

  • Water

Ingredients for Avocado Toast:

  • 2 Slices of Bread (I used wheat, but this would be so good with rye bread as well)

  • 60g of Avocado

  • Spinach

  • Tomato

  • Alfalfa

  • Salt

  • Pepper

  • Lemon

  1. To make the green smoothie: add all the green ingredients to a blender. Add more water / soya milk according to how thick you like your smoothies.

  2. Mash 60g of avocado, squeeze a bit of lemon into it, add a bit of salt and pepper.

  3. Toast the bread.

  4. Spread the mashed avocado on top of the bread.

  5. Put spinach and tomato on top of the avocado.

  6. Add the alfalfa on top.

  7. Add a bit more pepper.
