- Vegan Apple Roses -

Apple roses, simple to make but fools someone to think that you are more skilled than you actually are. I first saw these about a week ago and now, everyone knows about it. Literally everyone. But of course, if I was going to recreate this, I was going to make my roses slightly different.

I decided to go make my own vegan puff pastry, because I have never tried making a vegan puff pastry before, a chocolate version, and no processed sugar in the roses itself (I added some icing sugar just for decoration). The vegan puff pastry turned out pretty well, I used solid coconut oil as I thought that it would resemble butter the most (also, I have no idea where to get vegan butter here in HK). However, just like the regular puff pastry, it requires a lot of time to make. But just put on a movie and time will pass by so much quicker!

A chocolate version was also made, where I brushed the pastry with melted chocolate, and this one is a lot richer. So it really just depends on what you prefer! I love both equally as much <3

So if you want to know how to impress a bunch of people and get everyone to ask you, how did you make that?! Keep reading on! The process is a bit long because I decided to make my own vegan puff pastry, but you can just buy puff pastry (vegan or non vegan) if you don’t have that much time.

Vegan

Recipe:

Makes 18 servings

Vegan Puff Pastry Ingredients:

  • 250g of plain flour

  • ½ teaspoon of salt

  • 130g of Coconut Oil (Solid Form)

  • Water

  • Extra flour for dusting

Others:

  • 1 Apple

  • 100g of Vegan chocolate

  • Cinnamon

  • Stevia

  • Coconut oil (Liquid Form)

  • Icing sugar (for sprinkling on top of the rose)

Vegan Puff Pastry :

  1. Mix the plain flour and salt in a bowl. For the coconut oil, make sure that the coconut oil is solid but malleable. Crumble the coconut oil with the flour and salt until the coconut oil is pea sized.

  2. Add water until the mixture can form a dough. If too much water is added, add a bit of flour.

  3. On a floured surface, roll the dough out into a rectangle that is around 2cm thick.

  4. Fold the short side of the rectangle towards the center of the rectangle, repeat on the other short side. Now fold one side over the other (like closing a book).

  5. Rotate 90 degrees and repeat the step above. So you now have 2 folds.

  6. Put in the fridge for 25mins.

  7. Take out of the fridge, repeat step 4 and step 5 twice, you will now have 4 folds.

  8. Put in fridge again for 25mins. Take out of the fridge and repeat, to make a total of 6 folds.

Apple Rose:

  1. Preheat the oven to 180C.

  2. Roll out the dough until a rectangle is formed, cut into long strips. Don’t make the strips too thin as you have to fold half over the apple slices later.

  3. Cut the apple into thin slices. I found that sometimes that apple slices are slightly too hard and break when I roll them up so I would suggest soaking it in hot water for a while until the slices are slightly softer.

  4. Place an apple slice on the dough, occupying about half of the dough’s width.

  5. Overlay the second apple slice on top of the first one, covering about half of the first apple slice. Repeat until the entire length of the dough is covered with apple slices, making sure that each apple slice overlays one another.

  6. Sprinkle a bit of cinnamon and stevia on top of the apple slices and dough.

  7. You should have about half a width of the dough’s remaining, fold that over the bottom of the apple slices. Make sure you repeat this for the whole length of the dough. This keeps the apples in place.

  8. Starting from one end, roll the dough towards the other end. Continue until the entire length of dough is rolled. It should look like a rose.

  9. Grease a cupcake tin and place the rose in it.

For the chocolate version:

11. Melt the vegan chocolate either in saucepan or microwave.

12. If the mixture is too thick, add a bit of hot water and mix. You want the mixture to be easily spreadable.

13. Using a brush, brush the dough (in a long strip) with the chocolate sauce. Repeat steps 4-8 above.

14. After the rose is formed, brush the outside of the dough with chocolate sauce.

15. Place in a greased cupcake tin.

16. Repeat until all the dough is used, switching between chocolate version and non chocolate version.

17. Bake for 30mins.

18. Let the apple rose cool on a cooling rack.

19. When the rose is cool, sprinkle with cinnamon and a bit of icing sugar.
