- Courgetti Salad with Spicy Hummus -

Spiralized courgette is one of my absolute favourite meals. It’s full of fiber, it’s like eating noodles and it’s ready in less than 5mins. But courgettes here are so expensive, $30hkd for two medium sized courgettes compared to $15hkd for 3 big courgettes in London. :( I miss getting vegetables, like spinach, rocket and courgette for cheap prices </3.

To make this slightly more filling, I added some cooked red rice and tahini (which is very filling and gives the salad a nice creamy texture). And what goes perfectly with ANY salad? Homemade hummus. Delicious, filling, and I would suggest keeping some in the fridge if your someone that doesn’t really have time to cook :)

Vegan, Gluten Free

Recipe:

Makes 3 servings

Ingredients for Salad:

  • 40g of Cooked Red rice

  • 2 Courgette

  • ½ a Cucumber

  • 1 Tomato

  • 2 handfuls of rocket (more / less according to your own personal preference)

  • 2 tablespoons of Tahini

  • ½ a lemon

  • Salt

  • Pepper

Ingredients for Hummus:

  • 240g of Chickpeas

  • 1 tsp of Coconut oil

  • Salt

  • Pepper

  • Chili powder

  • Water as needed (or coconut oil if you want the hummus to be thicker)

Others:

  • Carrot

  • Celery

  1. Spiralize the courgette, cut the cucumber into long strips, dice the tomato.

  2. Mix the rocket and cooked red rice with the other salad ingredients.

  3. Add lemon, tahini, salt and pepper to the salad, mix well.

  4. Food process all the ingredients for the hummus together, add a bit of water each time so it doesn’t become watery and thin. You can replace with coconut oil if you want it thicker and creamer.

  5. Cut carrot and celery sticks for dipping into the hummus.
