- Vegan Ice Cream Mochi (Refined Sugar Free) -

Did you guys know that store bought mochi actually contains a 2:1 ratio of glutinous rice flour to refined sugar? So if I were to follow this, there would be 50g of sugar to 100g of glutinous rice flour. That’s 5g of sugar per mochi and that’s excluding the sugar from ice cream! Such a high amount of sugar is used to actually keep the mochi soft. Hence, omitting this means the shelf life is shorter and the mochi may not be as soft. But these are so good I’m sure that they will be gone so quickly!

I replaced the sugar with a bit of stevia so the mochi is still slightly sweet. Also it’s my first time making them and they were quite a mess to make!

So here are some of my tips:

  1. Use a cookie / ice cream scoop. I didn’t use one because I didn’t have time to go and buy it and my mochi turned out to be all different shapes. Not very round or attractive at all.

  2. They get sticky fast, so always make sure that you have corn starch and that your hands, especially fingers, are covered with corn starch.

  3. The ice cream melts really fast, especially when you starting wrapping it. So I would suggest that you put the ice cream ball in a cupcake liners so that you can take each ice cream out one by one. Immediately after you wrap the mochi around the ice cream, put it in the freezer.

Also, I bought Happy Cow ice cream, its dairy free, soy free, gluten free, and also low glycemic. They also use natural and organic ingredients but their ultimate goal is to make you go green without comprising your favourite food! I got the green tea and salted caramel ice cream and it’s so good. You wouldn’t believe that this is vegan ice cream and its way better for you! Pick this up if you ever get the chance, they also have a ton of flavours!! But of course you can make your own ice cream! I have just been wanting to try their ice cream for a while :P

Now you don’t need to hunt for ice cream mochi any more in Asian markets, you can make your own! More importantly, they don’t contain any refined sugar and is just as good!

​Vegan, refined sugar free

Recipe:

Makes 10 servings

Ingredients:

  • 100g of Shiratamako (glutinous rice flour)

  • 180ml of water

  • Stevia

  • Corn Starch

  • Happy Cow Green Tea ice cream

  • Happy Cow Salted Caramel ice cream

  • Roasted sesame (for sprinkling)

  1. Using a cookie scoop / ice cream scoop and scoop out the ice cream so it makes the ice cream round and the same size each time.

  2. Place the scoop of ice cream in cupcake liners or cupcake tin. Put in freezer until the ice cream freezes as a ball.

  3. Mix the shiratamako and stevia in a bowl.

  4. Add the water to the bowl of shiratamako and stevia, mix well together.

  5. Lightly cover the bowl with plastic wrap. Microwave on high heat for 1min.

  6. Take out, stir, and microwave again for 1min.

  7. Take out, stir, and microwave for 30sec. The final result should turn from an initial white color to an almost translucent color.

  8. Cover a surface with parchment paper and cover with corn starch.

  9. Transfer the mochi onto the corn starch surface and dust with more corn starch. Once the mochi has cooled down, roll out the mochi into a thin layer using a rolling pin (also covered in corn starch).

  10. Refrigerate the mochi for 15mins.

  11. Take out the mochi and cut using a cookie cutter or knife into even sizes.

  12. Dust off the excess corn starch on the cut mochi, place on top of a plastic wrap.

  13. Place a plastic wrap of the cut mochi. Repeat until all the mochi is used (In between each layer of cut mochi, it should be separated by a plastic wrap).

  14. Put all the mochi in the refrigerator for 20mins.

  15. Take out the mochi and ice cream balls.

  16. Place the ice cream ball in the middle of the mochi, pinch the corners of the mochi to wrap the ice cream mochi.

  17. Put a bit of corn starch on the sticky area of the mochi to seal the opening.

  18. Cover with the plastic wrap, twist, and put in freezer.

  19. To serve, place in fridge for a few minutes beforehand so the mochi softens. Sprinkle with a bit of sesame if wanted.
