- Baked Oats with Caramelized Banana (Vegan) -

It might not be cold here in Hong Kong, but that ain’t stopping me from enjoying a warm bowl of oats. This isn’t my usual quick recipe or something you would grab and go, I would suggest overnight oats instead! This one’s for those lazy Sunday mornings and watching a movie ;)

P.S. The combination of cacao and caramelized bananas is just the best.

Vegan, gluten free

Recipe

Makes 1 serving

Ingredients:

  • 40g of gluten free oats

  • 80ml of plant based milk

  • 1 teaspoon of cacao powder

  • 1 banana

  • Some Pomegranate

  • Shaved coconut

  • Some coconut sugar

  1. Preheat the oven to 180C

  2. Cook the oats with plant based milk in a pot, add some cacao powder and coconut sugar to it. Pour the oats into an oven safe dish.

  3. Slice the banana, sprinkle with a bit of coconut sugar.

  4. Put the banana and oats in the oven. Bake for 10-15mins until the banana is caramelized and most of the liquid from the oats are gone.

  5. Take the banana and oats out of the oven. Cover the oats with the caramelized banana, pomegranate and shaved coconut.
